Whenever I host a party I like to start off my guests with fancy appetizers decorated in a plate. The fig and goat cheese roll-ups are one of my many creations which serve this purpose. It has the sweet and sour taste of fig and lemon zest. The tang of prosciutto and the gooey taste of goat cheese. Many of my guests have complemented me for this starter and I recommend that you also take a try at it. Fig is known for its high vitamin and mineral content. While goat cheese is easy to digest and relatively low on calories and cholesterol.
- ¼ cup olive oil
- 2 t lemon zest
- 2 T lemon juice
- Kosher salt and pepper to taste
- 12 slices prosciutto
- 8 ounces fresh goat cheese at room temperature
- 12 fresh figs, sliced in 1
- 2 large handfuls of arugula
- 1Put the lemon zest and juice in a small bowl and whisk in the olive oil. Season with salt and pepper to taste. Set aside.
- 2Lay the prosciutto out in rows on a clean counter. Spread each slice with a thin smear of goat cheese. Arrange the fig slices over each piece of goat cheese-covered ham, covering evenly, but stopping 2-3 inches short of one end of the prosciutto strip. Arrange the arugula on top of the figs so that the edges of the arugula project just beyond the edge of the ham slice, stopping a couple inches short of one end of the ham slice. Drizzle each strip with a little of the lemon vinaigrette.
- 3Starting at the end of the prosciutto slice covered with the figs and arugula, roll up the slices to create a roll. Use the tail end of the slice with just the goat cheese to secure the roll together. Slice each roll in half crosswise and place cut-side down on a serving platter.
- 4Rolls can be eaten immediately or refrigerated for a couple hours.
